1. Missed you all 2. Unarguably one of the best tacos 🤤 recipe below!! Ingredients: -4lb chuck roast (I actually did half short rib but kinda wish I did all chuck roast… do what you will with that knowledge🫡) -1/2tbsp salt and pepper -1tbsp olive oil -12 guajillo chiles, 5 ancho chiles, 5 árbol chiles (all seeded, stemmed and rinsed) -3 large Roma tomatoes (quartered) -1/2 yellow onion (quartered) -1 Mexican cinnamon stick -3 bay leaves -1/2tsp peppercorns -5-7cups water -2c beef broth -1/4c distilled white vinegar -5 garlic cloves -1tsp ground cumin, 1tsp Mexican oregano, 1/2tsp ground cloves For the tacos: Oaxaca cheese, cilantro, lime and diced white onion Recipe: -add chiles, tomatoes, onion, cinnamon stick, bay leaves and peppercorns to a med sauce pan. Fully submerge in water, bring to boil. Cover and let simmer for 10 min -season beef with salt and pepper. Cut chuck roast into quarters. Heat a large Dutch oven on med-high. Sear meat until browned on all sides (you’ll need to do this in batches). Add all the meat back and remove from heat -to a blender add chiles, tomatoes, onions, peppercorns and 1c of the liquid it was cooking in (discard cinnamon stick, you can leave it but I personally don’t like tasting a lot of cinnamon😂). Add beef broth, white vinegar, garlic, cumin, oregano, cloves. Blend in high until smooth. Strain sauce through a fine strainer into the pot with the beef -stir meat and the sauce together. Bring to a boil, cover and let simmer for 3-3 1/2 hrs until meat is fall-apart tender -transfer meat to a bowl and shred. Keep some consomé for dipping. Add meat back to the pot. Taste and add salt if needed -heat a large cast iron on med-high. Dip tortillas in consomé. Add to the pan. Add cheese, meat and cook until golden brown on both sides. Add cilantro and onion to the tacos before serving!! Hi, missed you 😘 here’s some chocolate cherry pancakes !!! Recipe below! Ingredients: -2 cups flour -2.5tbsp sugar -1.5tsp baking powder -1.5tsp baking soda -1tsp salt -dash of cinnamon -2 cups buttermilk -2 eggs -3tbsp melted unsalted butter (plus more for cooking) -1 cup quartered and pitted cherries -1/3c ish chopped dark chocolate -whipped cream: heavy whipping cream, powdered sugar, vanilla bean or vanilla extract, salt -cherry sauce: 2 cups halved and pitted cherries, 1/3cup water, 1/2tbsp cornstarch, 1tbsp lemon, 1/2tbsp sugar (or more if you want it sweeter) Recipe: -in a large bowl whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt. To the middle add melted butter, buttermilk and eggs. Whisk to combine (dont over mix). Fold in cherries and chocolate. Set aside for 30 min -heat a pot on med heat. add 1cup cherries, corn starch, water, lemon, and sugar. Slowly add cherries and stir until it thickens. Cook until cherries are softened and there’s a syrup consistency (about 10min). Add water as needed -heat a pan on med-low. Add butter and 1/3c of pancake batter. Once bubbles form on the top, flip. Cook each side until golden brown -whisk together 1-2cups heavy whipping cream, vanilla bean (or 1-2tsp vanilla extract), pinch of salt and 1-2tbsp powdered sugar. Whisk until firm peaks form. Taste and adjust to your liking! Tip: make sure heavy whipping cream is COLD (you can also add to the freezer) -top pancakes with cherries and whipped cream!! Enjoy! *pancake batter adapted from The NY Times recipe :)

I followed it almost exactly (made some slight changes but not really worth noting) For the garlic naan I used this recipe https://cafedelites.com/buttery-garlic-naan-recipe/ I’ve made this a couple times and this recipe is foolproof! So easy and delish every time!!

fig grilled cheese with spicy (ish) tomato soup? Say less, the ultimate combo 😮‍💨 recipe below!! Ingredients: -3lb Roma tomatoes -1 head of garlic -1 sweet onion (diced) -1 red bell pepper (diced) -1 large carrot (diced) -2cups chicken broth -1/3c heavy cream -1/3c packed basil -1/4tsp red chili flakes -1/2tsp dried oregano -2tbsp butter -1 1/2tsp tomato paste -1tsp hot honey (or regular but I used @mikeshothoney) -olive oil -salt/pepper (to taste) Recipe: -preheat oven to 425F. Quarter tomatoes and put onto parchment lined baking sheet. Drizzle w olive oil and salt and toss around. Cut off the top of the garlic to expose all the cloves, cover in oil and foil. Add to oven -bake tomatoes until tender and slightly brown 20min (toss halfway through). Bake garlic for 40ish min until tender (or until fragrant) -in a large pot on medium heat add butter, onions, bell pepper, carrots, and salt (~1/2tsp). Sauté until veggies are softened. -add red chili flakes, oregano, pepper, and tomato paste. Stir and cook for another 3 min. Add Roma tomatoes, broth, honey, basil, and roasted garlic. Bring to a simmer for 10 min. -transfer to a blender and blend until smooth -add heavy cream and taste and adjust! (Might need to add more salt or honey based on your preference!) -GRILLED CHEESE: I added havarti, smoked cheddar, and provolone to white bread! I HIGHLY recommend adding a little bit of fig jam, it goes so well with this soup! Butter the outside slices of the bread and cook on med until golden brown and melted inside. :) -optional: top the soup with pepper, basil, parmesan and cream! unarguably one of the best classic sandwiches 😮‍💨 recipe below!! Ingredients: -Italian bread (this was the best I could find but I’d recommend using a large baguette) -1-2 chicken breasts (depending on how much you want to make) -sliced mozzarella -parmesan -flour -2 eggs -panko bread crumbs -onion powder, smoked paprika, salt, pepper -marinara sauce: 28oz can whole tomatoes (crushed w hands), 2tbsp olive oil, 7 cloves of garlic (sliced), 1/2c basil, 1tsp salt, 1/2tsp chili flakes -neutral oil Recipe: -in a large pot on med heat add olive oil and garlic. Let simmer for a couple min until garlic is fragrant. Add crushed tomatoes, basil, salt, and red chili flakes. Let simmer for 20-30 min. Turn heat down to med-low -whisk eggs and add to a large plate. Season bread crumbs with a generous amount of onion powder, paprika, salt and pepper. -butterfly chicken and pound to make it all even. Coat chicken in flour, egg, and then panko -preheat oven to 450F -heat 2inch of neutral oil in a large pan on high heat. Once 350F or sizzles when adding flour, add the chicken. Cook each side for 3-5 min until golden brown. -remove most of the basil from the sauce and blend with an immersion blender (if you want to, not necessary) -Add chicken to a cooking wrack (with a sheet pan under it) add a little bit of marinara to the chicken (just a little so it doesn’t make the chicken soggy) add mozzarella. Bake in oven until cheese is melted, 5ish min. -top with parmesan -drizzle olive oil, salt and pepper on bread and toast in a cast iron. Add marinara to the bread and layer the chicken parm. Serve with extra marinara on the side for dipping!!
